José Andrés’ real name is José Ramón Andrés Puerta. Andrés was entrusted with the duty of providing food for an admiral when he had to complete his Spanish military service at the age of 18. When he was 15 years old, Andrés enrolled in a culinary program in Barcelona. He spent three years working at El Bulli between 1988 and 1990, which is where he first met Ferran Adrià. He made the decision to travel to the US in order to advance his culinary profession after Adrià fired him in December 1990.

In order to work as a cook at the renowned Spanish restaurant Eldorado Petit in midtown Manhattan, he moved to New York City at the age of 21 and brought $50 with him.
