Japanese renowned chef Nobuyuki “Nobu” Matsuhisa was born on March 10, 1949. Additionally, he owns restaurants and is well known for his fusion cuisine, which combines ingredients from Peru with traditional Japanese recipes. After the passing of his father, Nobu started to travel the globe. He encountered different cultures throughout the journey while being raised by his mother, and he personally saw the depths of poverty and starvation. Later in life, he tried to use his economic operations to give back to communities as a result of his experiences. He started working as a dishwasher at the restaurant Matsue Sushi in Shinjuku, Tokyo, after finishing high school. He received his Sushi master training in the same restaurant.
After seven years, a regular client of his—a Peruvian with Japanese ancestry—invited him to build a Japanese restaurant there. He relocated to Lima, Peru, in 1973 when he was 24 years old, and together with his sponsor, they built a restaurant there with the same name, Matsue. When Nobu moved to Japan, he struggled to find many of the ingredients he was used to using and had to improvise. It was during this time that he created his distinctive cuisine, fusing Peruvian ingredients into traditional Japanese dishes. But the eatery had to close after three years. Following a brief stint in Argentina, when he attempted to create a new restaurant, he eventually relocated to Anchorage, Alaska, where he established his own eatery.

The restaurant burned down due to an electrical fire around two weeks after the grand launch. After the restaurant burned down, Nobu battled intense melancholy and contemplated suicide, yet he felt forced to go on. Soon after, he consented to work in a Los Angeles sushi bar with six chairs. He relocated his family to Los Angeles, put his job development first, and applied for a green card. In 1987, Nobu was prepared to try again. He founded Matsuhisa in Beverly Hills, where he displayed his fusion design to Hollywood’s elite, with the help of a $70,000 loan from a friend. There are at least 15 Nobu hotels as of March 2021, including establishments in Chicago, Ibiza, Las Vegas, two in London, Los Cabos, Malibu, Manila, Marbella, Miami Beach, Palo Alto, Warsaw, Perth, Australia, Doha, and Barcelona among them. Aside from being a chef, Nobu has appeared in minor roles in three important movies: Memoirs of a Geisha (2002), Austin Powers in Goldmember (2002), and Casino (1995), which he co-starred in with his business partner Robert De Niro (2005).
